Chicken Saltimbocca
4 chicken breasts, boned but not skinned
4 slices boiled ham or prosciutto
4 slices mozzarella
4 slices tomato, thinly sliced
12 basil leaves, large
¼ c. olive oil
¼ c. lemon juice, fresh
Salt and pepper to taste
Flatten chicken breast with mallet (between heavy plasic) until doubled in size. Tuck 1 basil leaf under skin of each chicken breast. Turn over and salt and pepper. Layer ham, cheese, tomato (in that order) on top of the chicken . Salt and pepper the tomato. Top with basil leaf. Tuck in sides and roll up, securing with toothpick or tie with kitchen string. Combine lemon juice and olive oil and rest of the basil (chopped). Marinate chicken in mixture and grill for 20 min. Or bake in 350 degree oven for 40 min. Serve over a bed of rice, couscous or any kind of pasta. Serves. 4.
