HUEVOS RANCHEROS
3 onions chopped 2 jalapeno peppers, diced (optional)
2 green peppers, chopped 12 eggs, beaten
1 cup black olives, halved 1 teaspoon chili powder
1 cup fresh mushrooms, sliced 1/2 teaspoon oregano
1 cup tomatoes, chopped 1 teaspoon worcestershire
1 can green chillies dash Tabasco
1 cup ham, diced Salt and pepper to taste
1 cup cheddar cheese, sliced Salsa and/or sour cream
In a 9 x 13 buttered baking dish, layer onions, green peppers, black olives, mushrooms, tomatoes, green chillies, ham, with cheese on the top layer. Mix chili powder, oregano, Worcestershire, Tabasco, salt and pepper with the beaten eggs. Pour egg mixture over the ingredients in the baking dish. Bake in a pre-heated 375° oven for 45 minutes. Serve topped with salsa and sour cream. Serves 8-10.
Can be done in individual baking dishes. Each portion will require 2-3 eggs per dish. Baking time will be from 20-30 minutes at the same 375° temperature. Dish should be browned and puffed on top.
Suggestion: Do not substitute other olives for the black olives. They add a distinctive flavor.
