THE DUKE'S MAYO BAKED FISH

2 6-ounce filets of a white fish (mahi, grouper, etc.
Salt and freshly ground pepper
Juice of 1/2 lemon (zest, as well if you like)
1/4 cup tamari sauce
1/4-1/2 cup Duke’s mayonnaise, I especially like the tang of Duke’s for any dish
Montreal steak seasoning


Preheat oven to 400º. Place fish filets in a baking dish. Sprinkle lightly with salt and freshly ground pepper. Pour lemon juice over the fish, and the same with the tamari sauce. Liberally spread the mayonnaise over the fish with a rather thick coating (keeps the moisture in). 

Shake Montreal steak seasoning over the top and cook in pre-heated oven for about 10 minutes. When fish becomes opaque, it is done. If you want to further brown the dish, broil for 2 more minutes. Serves 2.

How easy is that? And fit for a “Duke”!

* You can fancy up this dish by topping with Panko bread crumbs before cooking. This makes a crunchy topping. Some cooks add parmesan cheese as well, but I am reluctant, because I have Italian friends that say that  is a “No-No”!
