MANDARIN ORANGE SALAD

2 heads Bibb lettuce
1 can (15 ounce) mandarin oranges in light syrup
1/2 large red onion, sliced
1 cup walnuts and/or slivered almonds, toasted
1 cup dried cranberries
1/4 pound bleu cheese, crumbled or 1/2 cup shaved Parmesan cheese

Dressing:

1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon orange juice
1 table agave syrup
1 teaspoon Dijon mustard
Salt, dash of

Layer lettuce in a large salad bowl or on a platter. Top with mandarin oranges, red onion, then nuts, cranberries, and cheese in that order. Mix all dressing ingredients in a cup and spoon over the salad. And there you have it—a colorful, healthy, refreshing salad!
