DIVINE BOVINE RIBEYE
1 steak, cut of your choice
Flavor Seed Divine Bovine, Steak Rub & Seasoning
Extra Virgin Olive Oil
Finishing Salt (Coarse Sea Salt)
Fresh ground pepper
First out of the Flavor Seed box is Divine Bovine to be paired with a ribeye steak purchased from my friends at the New York Butcher Shoppe Mt. Pleasant. The marbled choice of meat should do justice to the fresh, organic spices.
Let the steak come to room temperature for 2 hours before firing up the grill or heating up your skillet. Rub both sides of steak with a liberal 1 tablespoon of seasoning. Sear on high heat, 3-4 minutes a side, depending on thickness of steak and desired doneness. I prefer my steaks rare-medium rare. I have an infrared thermometer and it should read 125-130°. Letting it rest for 5 minutes before serving will allow the temperature to rise another 5°.
As the Tuscans do in Italy, I like to drizzle the steak with extra virgin olive oil and sprinkle a dash of finishing salt (coarse sea salt) and freshly ground pepper at the last minute.
This preparation made for a juicy, mouthwatering, succulent melt in your mouth dish…with flavors bursting of garlic, onion, and pepper (both black and red) and some unusual surprises… coriander, anise…and most of all dill. I discovered recently that Greeks use dill with their meat and I would never imagined this combination.
