MIMI'S OLDE-FASHIONED OATMEAL CRUNCHIES
2/3 cup brown sugar, packed
3/4 cup white sugar
1 2/3 sticks butter, room temperature
2 eggs, room temperature
1 teaspoon vanilla
1 cup pecans, finely chopped
2/3 cup raisins
1 1/2 cup self-rising flour
3 cups old-fashioned rolled oats
1 teaspoon cinnamon

In a mixing bowl, cream together the sugar and butter thoroughly. Add eggs and vanilla and mix. In a separate bowl, stir the raisins and nuts together; coat with 1 tablespoon of the flour. Add the flour and oats alternately into the butter/sugar mixture until thoroughly incorporated. Then add the raisin/nut mixture.
Pre-heat the oven to 350°. Line a cookie sheet with tin foil. Drop small amounts from the end of a teaspoon. (You can get about 4 across and 5 rows down). You do not want them to run together.
Place a sheet of tinfoil on a shelf in the bottom of the oven at the second level with the cookie sheet of cookies on top of it. Bake 12-15 minutes until browned and crispy. Cool before removing to make them extra crunchy!
Great during the holidays as a hostess gift or as a “Care Package” as they travel well! They were the absolute favorite of my kids from their grandmother “Mimi”!
It will be impossible to eat just one. They are like “CRACK” in a good way!
