CEDAR PLANK SALMON

1 6x12 inch untreated cedar plank
1 (8 ounce) salmon filet (I used sockeye salmon)
1 tablespoon sesame oil
1 tablespoon lemon juice (freshly squeezed)
1/4 cup tamari sauce
1/4 cup sweet chili sauce
Freshly ground pepper
Finishing salt


Soak the cedar plank in warm water for at least an hour, or more if you have the time.

In a shallow dish, combine sesame oil, lemon juice, tamari sauce, chili sauce. Marinate the salmon filet for 30 minutes or up to an hour, turning the fish every 15 minutes. Before cooking, grind fresh pepper over the top of the non-skin side.


Preheat the grill for 5 minutes on medium high heat. Place cedar plank on grill. When it begins to smoke (after about 5-10 minutes) place the filet on the plank, skin side down. Cover the grill and cook for 20-30 minutes, depending on thickness of filet and your preferred doneness. I cooked my fish for 30 minutes because I like salmon flaky.

Before serving, sprinkle a bit of coarse sea salt or a finishing salt of your choice over the top.

Enjoy a healthy and tasty choice for getting plenty of omega-3 fatty acids.
