RETRO FRENCH GREEN BEAN CASSEROLE
2 cans French style green beans (15 ounce)
2 cans sliced mushrooms (4 ounce)
1 can Cream of Mushroom Soup, undiluted
4 slices bacon
1 onion, peeled and chopped
Salt and freshly ground pepper to taste
1 can French’s French Fried Onions
Preheat oven to 350 degrees.
Cook bacon until crisp, drain. Crumble when cool. In the reserved bacon grease sauté the onions until translucent. In a large bowl mix all ingredients except for the canned crispy onions. Pour into a 1 1/2 quart greased casserole dish.
Bake in oven for 30 minutes until bubbly. Pour crispy onions over top and bake 5 more minutes. Serves 6 people.
Daughter Caki asked for a simple dish to take to a company holiday potluck and I thought back to my early cooking days and the Campbell’s Cooking With Soup books. How many times did I resort to the French Green Casserole recipe for a open a can, dump, and cook for a vegetable. I personally think everyone ate it because of the crispy Fried Onions on top.
