Mushrooms in Garlic Sauce
6 tablespoons olive oil
1 pound mushrooms (cut into bite size pieces if necessary) cleaned
8 cloves garlic, minced
2 tablespoons tomato paste
1/2 cup beef broth
4 cloves garlic, whole
1/2 teaspoon crushed red pepper
Salt and pepper to taste
Parsley
Slivered almonds roasted (optional)
Saute garlic in olive oil, add mushrooms and continue cooking for about 2 minutes. Add remaining ingredients except for the parsley and cook 5 more minutes. To serve, remove the garlic cloves and sprinkle the parsley on top. Garnish with slivered almonds if you like.
