SWEET POTATO FLUFF
8 medium sweet potatoes, baked, peeled, and mashed
1 cup sugar
2 oranges, juiced
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
4 tablespoons butter (1/2 stick)
1/2 cup milk (can be lowfat)
2 tablespoon spiced peach juice (can use pineapple juice)
1 tablespoon crushed pineapple
2 eggs, separated
Preheat oven to 400 degrees. Cover mashed sweet potatoes with orange juice to keep them from turning brown (if doing this step ahead). Beat egg whites until they form stiff peaks. Mix sugar, cinnamon, cloves, nutmeg, butter, milk, egg yolks, and sweet potatoes with beater until creamy. Fold in pineapple and egg whites gently into sweet potato mixture. Spoon into greased casserole and bake for 1 hour. Garnish with toasted pecans and/or slivers of orange zest.
