NIMAN RANCH
I first became familiar with the NIMAN RANCH brand when I was testing hot dogs for a July 4th bash. They became a favorite, but the FEARLESS UNCURED BEEF FRANKS are so popular they are sometimes hard to find. I decided to delve into “The Why” and on the website you can “Dig A Little Deeper”

Getting ready for Memorial Day weekend, I made these selections to be armed for any and all occasions. Like a Girl Scout, I like to be prepared!
First, you will find multiple choices for a Charcuterie Board.
The proscuitto is delish wrapped around cantaloupe slices over your favorite greens bathed in your own dressing…the salty and the sweet are a fabulous taste combo!
As for the tenderloin, there are numerous options for a meal. There are always Kebabs, marinated with your favorite BBQ sauce, skewed and grilled for your cookout.

I often pair my pork with a couple of slices of a nutritious baked sweet potato, and sautéed red or green cabbage, or collard greens, which you can top with my homemade Mimi’s Pepper Relish.
I usually have on hand tortillas for leftover chicken, seafood, pork, and beef. Cut the protein into bite-size pieces. Sauté some diced onion and green peppers; when translucent add some salsa and remove from the heat. (I usually add some diced jalapeño at this point). Warm one side of the tortilla and flip warming the other side and reserve. Warm one side of a second tortilla and flip and add some grated cheese or cheese slices, topped the the salsa concoction, covered with the other tortilla. When cooked through, flip the tortilla and continue to warm until you have a tasty but simple fajita meal. You can also, use just one tortilla and after adding the cheese and salsa mix, you can roll as your taco. Fun for a crowd!
